I'd love to be able to get a specced down, "low"-power, version of this to use as a home server:

- lower-end cpu (the 32-core version would be just fine for me)

- keeping the possibilty having lot of ram around (128gb? 256gb? 512gb?)

- low-end gpu or no gpu at all (it would be headless anyway)

- keep the ipmi around

- maybe some 4 hot-swappable 3.5" drive bays ?

I could see myself blowing 2000-3000$ on something like as long as I can keep it working for ten years. Maybe update it a bit over the years.

And i'm not joking about the ten-years: I'm still using a 2014-era HP MicroServer Gen8 and it works great. It shows its age, but it does still work great.
