I don't think using LaTeX for the resume matters. I've been using Markdown to build my resume for ages, and I've seen resumes that are handcrafted HTML, and I've seen resumes that are just a text file. The format only matters as much as it display something about you (if you're a web developer/frontend person, you should have a high quality web resume) and how it affects readability. Otherwise, I don't care as a hiring manager / interviewer.
If LaTeX helps you get it done and lets you generate multiple formats easily, go for it. I use pandoc + markdown to generate mine, and it supports LaTeX inputs as well. Don't expect the person reading the PDF attached in the hiring system 10 minutes before the interview call to care whether you used LaTeX or not, or even to comment on it.
