We plan to move all our servers over to Hetzner from AWS, however continue using S3 (We didn't see a comparable service on Hetzner for S3)

Run Minio yourself? It's amazing, and easy to setup using dokku (for great backup/restore options).

We use the cloud servers, the 16core 32G amd machines (Ubuntu 20)
