I’ve always been a snob about cooking with gas only — but have recently been intrigued with induction for environmental reasons, and not needing to deal with gas refills. My stove is on a propane tank which I need to refill. It’s fine, but I do like the idea of eventually having solar + an induction range/oven. It seems like maybe induction isn’t as bad as I remember — or it’s progressed a lot over the years.
