Define alternative - this exploit means you could dual boot OSs, custom IPSWs, and downgrade at will

Edit: also yes theoretically you can upgrade to any iOS version at will as well

I am hoping for a postmarketOS port for some of these devices. Especially the iPads with 120Hz screens.

Yes absolutely.

Building reliable hardware support into your alternative OS is the hard bit though.
