Why use docker instead of something like flatpak or snap?

Personally I'd love a Steam flatpak, but since the current images are based on Fedora AFAICT (no surprise there, GNOME/FreeDesktop project) it would take a lot more work since you'd have ta create a Debian/Ubuntu SDK to base it from.
